Hearty Creamy Chicken Corn Chowder with Potatoes and Bacon

Fall is my favorite time to introduce new recipes and today I have a good one for you! With our garden producing a pretty good amount of veggies I decided to take some inspiration from it and make a hearty and cozy creamy chicken corn chowder with potatoes and bacon. This creamy soup is the perfect dinner on a chilly fall evening and by using in season ingredients like corn on the cob, I can use items from my garden too!
With the prices of groceries sky high these days, and as a mom, I am trying my best to get value from the groceries I bring into my home. Not only am I looking for value but also convenience. We have a small grocery store in our town, but the next largest town with a Walmart is 1 1/2 hours away. I prefer to shop at Walmart because they are a great one stop shop. When we come to the city, it’s nice to be able to stop at one store and get everything we need.
The addition of Walmart’s online grocery order and pickup has been an absolute game changer. I can plan my meals, order all the ingredients on the Walmart app and pick them up same day or the next day! I usually order a day before since we have to make extra plans when we head to the big city.
Walmart’s online ordering system is indispensable for my family and our everyday needs whether it is groceries, produce, beauty and hair supplies as well as many others. With it being harvest time, we have tried hard to take advantage of what we grow. So, when I decided to make this chicken corn chowder, I was lucky enough to have some corn from the garden, but I needed many of the ingredients and I happened to be heading to the city the next day. So I hopped on Walmart’s app and was able to easily place my order with all the things I need including all the other things I need at home.

CHICKEN CORN CHOWDER WITH POTATOES AND BACON
Chicken Corn Chowder
Ingredients
- 6-8 strips of bacon
- 4 tbsp butter
- 2 large chicken breasts (or one precooked rotisserie chicken from the store)
- 1 medium onion finely diced
- 2 stalks celery finely diced
- 1-2 tbsp garlic minced
- 6 cups chicken broth
- 2-3 cups fresh corn you can also use frozen
- 1 cup heavy whipping cream
- 3-4 cups potatoes diced into 1 inch pieces
- 1 sprig of fresh rosemary 1/2 tsp if dried
- 3 sprig fresh thyme 1/2 tsp if dried
- 1 tsp finely chopped fresh sage 1/2 tsp if dried
- 1/4 tsp smoked paprika
- pinch of cayenne pepper
- 1/2 cup grated parmesan cheese
- salt and pepper to taste
Instructions
- Slice your bacon into small pieces and cook it up in a large stock pot or dutch oven pot. Once it is crisped up, take it out and set on a paper towel.
- Remove most of the bacon grease and add your butter. On medium heat, add your onion, garlic and celery. Cook this down for about 5 minutes.
- Next add your herbs and chicken broth and potatoes and let it cook about 10 more minutes.
- Once the potatoes are tender, add the corn and chicken and let it simmer for another 5-10 minutes. At this point you really just need to heat the chicken and corn through.
- Finish it off with your heavy cream, parmesan cheese, smoked paprika and cayenne pepper. Season to taste with salt and pepper as well.
- Serve and top with shredded cheddar cheese and green onion if you prefer.
- If you like a more thick chowder you can add a cornstarch slurry to the soup to thicken it up a bit. We prefer ours to be more of soupy.
- Store any remaining soup in an airtight container in the fridge for up to 5 days. You can also freeze for up to 3 months.
Now, lets talk about the items I needed to make this hearty chicken corn chowder. I needed:
- heavy cream (you can also use half and half)
- fresh corn (on the cob or you can use frozen corn or canned, but fresh is so much better)
- bacon
- rotisserie chicken
- chicken stock or chicken broth
- potatoes ( I used an assorted bag of red, purple and small yukon gold potatoes from Walmart)
- onion
- celery
- herbs (sage, thyme, bay leaf) If you have fresh herbs, I highly recommend using them.
- garlic
- butter
- parmesan cheese
Toppings:
- shredded cheddar cheese
- sliced green onions

This hearty chowder is easy to make and can be cooked up in your Instapot or your slow cooker! I like to cook it in my enamel dutch oven pot, so that is what I did.
Lets prep all the ingredients. I started by washing my potatoes and corn.
Next I cut my potatoes into small 1 inch pieces. I did not remove the peel on them, since they are small potatoes with tender skin. Plus I love the colors of these potatoes in this soup.
I then cut my corn off the cob.
First, you want to cook up your bacon. You want crispy bacon for this soup. I am not a fan of soggy bacon in soup. I slice my bacon into small pieces and then cook it up in the same pan I am making the soup in.
Once the bacon has crisped up, remove it and let it drain on some paper towels. At this point you can use the bacon grease to cook your other veggies, but I like to drain most of it out and use a bit of butter as well. I prefer Kerrygold Irish Butter. The flavor is wonderful and I feel like. its. a great butter option.
Start by sauteeing your onion, celery, and. garlic in the pan and let them sweat for about 5 minutes on medium heat. Next, add your bay leaves and herbs.
Once you have done this, its time to add the potatoes and chicken broth. Let the entire thing simmer for about 15 minutes covered. Once the potatoes begin to soften a bit, its time to add the corn and chicken.
I love using a Rotisserie chicken from Walmart, and YES you can get it on your grocery order! From what I can tell, they limit quantities so a full chicken might not be available, but they also sell a rotisserie chicken already pulled from the bone and packaged up for you. They come cooked and chilled, which is super convenient when you are planning to use it later in a recipe. I find it to be super tender chicken and it makes it so easy to whip up hearty soups like this.
I used sweet corn from the garden and cut the kernels off the cob. You can also get corn on the cob on your grocery order! Literally everything you need!
Once you have the chicken and corn in the chowder, let it all cook for another 10 minutes. Make sure the potatoes are cooked thoroughly. The other ingredients just need to be heated through and combine with the soup.
The next thing you want to do is to add the heavy cream(or half and half) , parmesan cheese and bacon. Give it a good stir. If you want a thicker, more creamy texture, you can add a cornstarch slurry to thicken it up a bit.
The very last thing I do is add some smoked paprika and a pinch of cayenne pepper. This adds a nice smoky flavor and a bit of heat.
You can top this delicious chowder with some shredded cheese and some green onions if you so desire!
We love to eat this with some of our favorite garlic bread. Once again, I order Walmart’s bakery french bread on my order! I love that I can get fresh bread when I am too busy to make my own.
