Amazing Garlic Parmesan Mashed Potatoes
My kids love all kinds of mashed potatoes. They love them as a side dish or as a quick lunch as leftovers. I think mashed potatoes are a slept on side dish. I think a lot of times, people think you need gravy or a sauce on them, but if you season them up right they are a simple side dish that can easily be made and enjoyed. These garlic parmesan mashed potatoes recipe is one you can definitely enjoy with any weeknight meal!
Potatoes can be seasoned with so many ingredients, being a simple root vegetable it lends itself to so many yummy ingredients.
Often when I am making meat loaf, steaks, or grilled chicken, mashed potatoes is the perfect side, but I dont have gravy, so we give our potatoes extra flavor so that they stand on their own.

How to make parmesan garlic mashed potato recipe for an easy and flavorful side dish
Peel and cube your potatoes. I prefer to use russet potatoes or yukon gold potatoes. Take the potatoes and put them in a large pot. Cover with water and bring them to a boil. Boil on medium heat until the potatoes are fork tender.
Drain the potatoes in a colander. Place potatoes back in your pan and let them heat through on low heat for about 1 minute. This allows them to dry out just a bit.
Now, you can either add them to a stand mixer or mash them in the pan using a hand masher or hand mixer.
Add your unsalted butter(room temperature is easiest), minced garlic cloves, milk/cream and begin mashing the potatoes. Add your sour cream, chives and parmesan cheese and continue to mash until they are at your preferred texture. We prefer ours a bit more rustic mashed, so we use a hand masher to accomplish it. If you like them nice and smooth, use a hand mixer or stand mixer.
Add some salt and black pepper to taste and if you need more milk or sour cream to make them more creamy you can add a little bit at a time.
Serve hot with your favorite protein side. We like them with meat loaf, steak, chicken, and roasts.

Parmesan Garlic Mashed Potatoes
Ingredients
- 4-6 medium to large potatoes Use whichever are your favorite. If you prefer red potatoes you will need more because they are smaller.
- 1/4 cup butter
- 1/2 cup parmesan cheese
- 2 tablespoon fresh minced garlic
- 1/4 cup fresh chopped chives
- 1/2 cup sour cream
- 1/4 cup milk or heavy cream
- salt and pepper to taste
Instructions
- Peel and chop your potatoes into 1-2 inch sized pieces.
- Add them to a large pot and cover them with water.
- Boil the potatoes on medium high heat until the potatoes are fork tender.
- Drain the potato water and add the potatoes back to your pan.
- Keep the burner on low for 1 minute to help dry out the potatoes a bit.
- Add your garlic, butter, sour cream and milk and mash the potatoes. I use a hand held potato masher because we prefer them to be a bit more rustic and not super smooth. You want to add the garlic while the potatoes are hot so that it encourages the flavors of the garlic to wake up.
- You can also use a hand held mixer or use a stand mixer. It all depends on your preference with your mashed potatoes.
- Once they are mashed, add your parmesan cheese, chives and salt and pepper to taste. If you want your potatoes more creamy, add more sour cream or milk to make them have a creamier consistency. Serve these with your favorite protein. We love to serve them with my meat loaf, roast or steaks!
- Store any leftovers in the fridge in an airtight container for 4-5 days. Reheat in the microwave.
