Amazing Sourdough Aebleskivers (also known as) Danish Pancakes
Hey friends, I am excited to share a new sourdough discard recipe with you! This can be made ahead of time, and allowed to sit overnight to be true sourdough or can be made right away and simple use up sourdough discard that you have excess of. These sourdough aebleskivers are so good and so fun to make!
Jump to RecipeThese little round fluffy pancake balls are my kids favorite breakfast. We eat them with jam, whipped cream, nutella, syrup and more. You can even fill them with things like cookie butter and nutella when making them!
Aebleskiverย (or ebelskivers) are puffy Danish pancake balls and a traditional Danish dessert most often served during the Christmas season.
This is typically when we make them the most. Now, I am not taking credit for creating Aebleskivers in any way, just simply sharing my own take on these fluffy pancake balls using my sourdough discard. I know those that bake with sourdough like to have a collection of easy recipes to use up that discard, and this is one of them.

TOOLS YOU’LL NEED
Sourdough Aebleskivers / Danish Pancakes

Ingredients
- 2 cups all purpose flour
- 1 cup sourdough starter discard
- 4 tsp baking powder
- 1/2 tsp baking soda
- 3 tbsp honey or sugar
- 1 tsp salt
- 1 1/2-2 cups milk
- 2 eggs
- 3 tbsp butter
Instructions
Overnight Instructions
- In a large bowl, add the sourdough starter, flour, and 1 1/2 cup. milk and give it a. good stir until all is combined.
- Cover with plastic wrap and let sit on the counter overnight.
- In the morning, add the remaining ingredients and give it a good stir. If its too thick, you can add more milk to thin it out a bit.
- Preheat your cast iron aebleskiver pan and add nonstick spray or butter to the pan holes. Once the pan is hot on medium heat, pour enough batter to fill the holes almost to the top. Let this cook until little bubbles start to show and you can see that the underneath is starting to crisp up.
- Next, use 2 chopsticks or the mini forks that comes with the pan to carefully turn the dough voer while shaping it into a ball by holding it up and turning it allowing the holes to fill back up with the remaining uncooked batter.
- Allow this to cook until it feels crisp and baked all the way through.
- You can also add fillings to the batter once the holes are filled. We like to add a spoon of nutella or cookie butter. You can top them with fresh fruit and whipped cream, jams, spreads, syrups and sauces!
Quick Sourdough Aebleskivers
- In a large bowl add the starter, milk, eggs, butter, and sugar. Stir until combined well. Add the salt, soda, baking powder and flour and mix until just combined.
- Cook according to directions above.
- Store remaining aebleskivers in the fridge and reheat in the air fryer to crisp them up.
