Balsamic Chicken Salad with Roasted Sweet Potatoes, Feta, and Avocado
I used to make this salad all the time, and then, I just stopped. I have no ideas why. Do you ever do this? It wasn’t until my college aged son told me he was craving it, that I remembered it! And it’s a very memorable salad! This balsamic chicken salad is a whole meal. It has protein, healthy carbs and veggies and an amazing homemade balsamic dressing.
Salads are such versatile meal options. You can realistically add or take away any ingredient you want. This salad recipe is one that you will want to add all the ingredients listed! But, it is just as amazing if you do take some of the ingredients out due to dietary need.
This balsamic chicken salad has fresh spring mix and other salad greens, balsamic chicken, roasted sweet potato, avocado, red onion or shallots and feta cheese.
The sweetness from the sweet potato compliments the chicken and zesty balsamic vinegar dressing. Its such an amazingly easy salad too! Its perfect any time of year, and the chicken can be made in a skillet or on a grill!

Balsamic Chicken Salad with Roasted Sweet Potatoes, Avocado and Feta
Ingredients
- 12 oz raw chicken breasts cut into small pieces, I like them to be about 1 inch pieces.
- 10-12 cups spring salad mix, butter lettuce or romaine we have used just about every type of lettuce!
- 2-3 medium sweet potatoes peeled and diced into small pieces
- 1-2 sliced shallots Can also use red onion. Will only need about 1/2 onion
- 2 avocados
- 1-2 cups feta cheese crumbled
Balsamic Dressing
- 3/4 cup balsamic vinegar
- 6 tbsp olive oil
- 4 tbsp water
- 6 tbsp honey
- 1 tbsp italian seasoning
- 4 tsp minced fresh garlic
- 1/2 tsp salt
- 1 tbsp dijon mustard
Instructions
- To make this salad you can prepare ingredients ahead of time.
- Mix up your dressing first. Make sure to whisk the dressing as you add the olive oil so that it blends together. If it separates, just quickly whisk it up to remix. Once it is combined, add about 1/4 cup to the diced raw chicken and let it marinade while you prepare the rest of the ingredients.
- Roast your sweet potatoes in an over heated at 400 degrees for about 25-30 minutes. This will depend on how large you make the pieces. I make mine small, about 1/2 inch in size.
- While the sweet potatoes are cooking, you can prepare the other ingredients, you can put everything in one bowl or keep it all separate and allow people to add what they prefer.
- In a large skillet with 1 tbsp olive oil, heat it on medium high heat. Add your chicken to the skillet and saute it until it is cooked through. Check the sweet potatoes occasionally and remove them when they are soft in the middle.
- Once the chicken and sweet potatoes are done, its time to assemble!
- In a bowl add some greens, top with some chicken, sweet potatoes, avocado, shallots and feta cheese. Drizzle the balsamic dressing over your salad and enjoy!
