Brioche French Toast Muffins
Hi friends! Welcome to Twelve On Main! Today I have a really yummy and easy breakfast or brunch recipe for you. These brioche french toast muffins are so easy to make and will be a hit for that Easter brunch or for any other day.

I like to think these brioche french toast muffins are great any old day, but they’re a great addition to a brunch!

Brioche French Toast Muffins
Ingredients
- 1 loaf brioche bread 8-10 cups
- 6 eggs
- 2 cups milk
- 2 tbsp sugar
- 1 tbsp cinnamon
- 1 tbsp cinnamon sugar mixture to sprinkle the tops
- 1 tsp vanilla
Optional additions
- blueberries, chocolate chips, cream cheese icing These are all additional ingredients you can add to your brioche french toast muffins prior to baking
Instructions
- Preheat your oven to 350 degrees. Spray your muffin tin with non stick spray and set aside.
- Cut your brioche bread into 1 inch cubes and set it a large bowl.
- Mix your eggs, milk, vanilla, sugar and cinnamon together and pour over the bread. You can add chocolate chips, fruits or whatever your desire at this point.
- Immediately after mixing the egg mixture and bread together, start putting the mixture into the muffin tins and let them come out above the top of the muffin tins so that they look like a muffin. You can also do this step by adding the dry bread into the muffin tins and pour the egg mixture over each one individually.
- Sprinkle the top with some cinnamon and sugar.
- Bake for about 20-25 minutes or until golden on top.
- You can top with your favorite french toast condiments, I like to drizzle with a simple cream cheese icing.

If you’ve never had brioche before, it is an enriched bread dough that makes amazing toast, french toast and more. Its the perfect dough for these french toast muffins. I like to buy brioche at my local grocery store. I can even find it at Walmart already sliced! This makes it super easy to make this brunch recipe.
How to make brioche french toast muffins:
First, slice your bread into 1 inch pieces and put in a large bowl. Mix eggs, milk, vanilla, sugar, and cinnamon in a separate bowl. Spray your muffin tin with nonstick spray.
At this point you can do this two ways. You can pour the egg mixture over the bread, mix up and then pile into the muffin tins. You can also pile the bread into the tins and then pour the egg mixture over the bread. I often do the first, I find the bread gets more contact with the egg/milk mixture and soaks in. It makes it almost like a bread pudding.
Bake these in the oven for about 20 minutes on 350 degrees. You want them to get nice golden brown.
There are many things you can add to your french toast including chocolate chips, blueberries, and so much more. I like to keep mine simple.
A little drizzle of cream cheese icing and my kids are happy.
