Copycat Cheesecake Factory Brown Bread Recipe
My favorite thing about visiting The Cheesecake Factory is the brown bread. I am guilty I know! I have always loved pumpernickel bread, and the kind they serve there is light and tender and has a wonderfully sweet and savory flavor. Let me show you how to make some at home yourself without having to have flours like rye to make it. This Cheesecake factory brown bread is a must make!
I have a wonderful sourdough molasses bread that is very similar to this, but that one is a true sourdough recipe. It takes more time than this recipe does, but it gives very similar results. I wanted to share options for both for those that may not want to go through the work of sourdough or may not have a sourdough start.
This bread has a sweet molasses/chocolatey undertone that balances perfectly with the whole wheat flour and honey. It has just the right amount of butter int he recipe as well to provide a softer crumb.
I even topped it off with oats just like they do on the Cheesecake Factory brown bread. There is something so fantastic about this kind of bread. It has such an amazing flavor and is so good just with butter on it, or as a sandwich too!

TOOLS YOU’LL NEED
Cheesecake Factory Brown Bread
Equipment
- Kitchen Aid or Bosch Mixer
Ingredients
- 320 g water 1.5 cups
- 70 g honey 1/4 cup
- 60 g molasses 4 tbsp
- 50 g dark brown sugar 1/2 cup
- 20 g cocoa powder 3 tbsp
- 10 g salt .5 tbsp
- 250 g whole wheat flour 2 cups
- 300 g bread flour 2 1/4 cups
- 2 tbsp room temperature butter
- 15 g yeast 3 tsp
Instructions
- Start by adding all the wet ingredients including the cocoa powder, water, honey, molasses, yeast and brown sugar. Next add your flours and salt.
- Once the dough is combined, knead the butter into the dough either by hand or using a hand mixer. If mixing by hand you will knead to hand knead for apx 20 min. If you are doing it in a stand mixer, let it knead for 8-10 minutes.
- Let it sit and rise until; doubled in an closed container. This can take up to two hours because the dough is enriched. Once it has risen, divide it into 4 equal balls. Roll each out into a rectangle approximately 8 inches wide. Roll it up and pinch the ends together. Make sure to end of the roll is sealed underneath the loaf
- Place two on each baking sheet and cover them with a damp towel. Let them rise until doubled. Sprinkle oats on the top and place them in a preheated 350 degree oven.
- Bkae for approximately 20 minutes. It is hard to tell with this kind of bread when it is done. Check the bottom of the bread and if it is getting dark it is time to remove it from the oven. The oats will also start to loo toasty.
- Remove from the oven and allow them to cool for 20 minutes before cutting and enjoying. East with a pat of butter and share!
