Creamy Italian Sausage Soup with Pasta (Quick and Easy Dinner)
On these cold winter nights, as busy as we are, its nice to come home and have dinner mixed up and ready in 30 minutes. This creamy Italian sausage soup with pasta is so good and so easy to make, you’ll have it on repeat!
You will love this soup, and not only because it can be made really quickly with basic ingredients but that it tastes amazing and is so hearty, perfect for a cold night in, or a late dinner after a high school basketball game.(thats more my scenario)

Creamy Italian Sausage Soup
Ingredients
- 1 onion finely minced
- 3 cloves garlic minced
- 1/2 tsp fennel seeds
- 1 tsp dried rosemary also can use 1 fresh sprig of rosemary
- 6 cups chicken stock
- 1 28 oz can crushed tomatoes
- 8 oz ditalini pasta can also use macaroni pasta
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 cup parmesan cheese
- 4 oz cream cheese
- 1/2 cup heavy cream
- 1 lb spicy sausage
Instructions
- In a large stock pot or dutch oven, saute your onion with the ground italian sausage on medium-high heat. When the sausage is cooked, add your garlic and continue to stir for a couple of minutes.
- Next add your chicken broth, Italian seasonings, fennel seeds, rosemary and crushed tomatoes. Stir and bring the soup to a boil for a few more minutes.
- Next add your pasta (I prefer ditalini, but you can use macaroni or any small pasta). Turn the heat down to medium heat and simmer until the pasta is just about done.
- If you want to add veggies to this soup you can add spinach or kale to the soup at this point.
- Add your dairy.. heavy cream, parmesan cheese and cream cheese to the soup and stir until all is combined and melted into the soup.
- Taste the soup and add salt and black pepper to taste depending on your preference.
- Enjoy with a crusty slice of bread, top with some more parmesan cheese and enjoy!
- Store remaining soup in the refrigerator and reheat in the microwave or in a pan on the stovetop.
This soup recipe is one of our favorites. It is especially one of my favorites because I am generally cooking dinner and this is an easy one to make. It is a meal the whole family can enjoy. If you are gluten free, you can use gluten-free pasta to suit your dietary restraints.
Handy tip: Prepare Ahead!
If you want to control the heat of the soup, use plain sausage and add some crushed red pepper flakes to your desired heat.
You can also freeze this soup. I would recommend freezing it before you add the pasta and dairy. Keep it in the freezer for up to 3 months. You can reheat the soup base and then add the last remaining ingredients. This is a great meal prep option.
