Easy Slow Cooker Beef Stew

Its one of our most favorite meals, and one I remember eating as a kid! Its simple and the flavor is amazing! I am, once again, joining some of my favorite bloggers to bring you some amazing slow cookers!
Jump to RecipeI remember as a child, coming home to the smell of my moms oven stew that had been cooking on low for about 4 hours. Your mouth would literally salivate as you walked in the front door. For me, when this beef stew is being cooked, it signals the beginning of fall. Its hearty, comforting and oh so flavorful.
A few years ago, I started cooking in the slow cooker, in hopes that the flavor would still prove just as good. Guess what? It is! This slow cooker beef stew is amazing and so easy to make.
Now, I still cook it in the oven sometimes, because for me, there is something about cooking low and slow in the oven. I can’t really explain it.
This slow cooker beef stew has all the goodies: potatoes, steak, carrots, and a sauce that is out of this world, and you want believe how easy it is to make it.
This slow cooker beef stew starts with some simple ingredients:
potatoes, carrots, cubed beef, cream of celery soup, cream of chicken soup, tomato sauce, balsamic vinegar, bay leaves, and Lipton Onion Soup Mix.
Lets talk about how to make this slow cooker beef stew.
Its quite simple really. Peel and cube your potatoes, peel and cut up your carrots and put them both in the slow cooker. Cube your beef. I like to use a London Broil cut because it is affordable and tastes really good, especially after its been cooked slowly for along time. You can use whatever kind of steak you have.
Put 1 can of cream of mushroom and 1 can of cream of celery soup to the pot. Fill the cans with water and add them to the pot. Pour in your tomato sauce and add one can of water as well.
Next, sprinkle 1 package of Lipton Onion Soup Mix into the pot as well as the bay leaves. Last, drizzle about 1 tbsp of balsamic vinegar and mix it all together until the soups have dissolved and mixed well.
Put the slow cooker lid on and cook it on high for 4-6 hours.
I like to stir it every so often if I am home, but if not, it will turn out amazing anyways! We love to eat these with my homemade wheat bread, my soft crescent rolls, or my easy French bread.
The end result is a creamy, flavorful sauce in the stew, which is perfect for mopping up with a slice of bread.
It is perfect for fall too! Those chilly evenings, this comforting slow cooker beef stew will have you warm and fulfilled.
Sometimes at the end of cooking this slow cooker beef stew, I will add another tablespoon of balsamic vinegar right at the end. It adds a great unexpected zip to the dish.

Slow Cooker Beef Stew
Ingredients
- 1 10.5 oz can condensed cream of mushroom soup
- 1 10.5 oz can condensed cream of celery soup
- 2 cans water from the soup cans
- 1 8oz can tomato sauce
- 1 can water from tomato sauce can
- 4 bay leaves
- 3 large potatoes, peeled and and cubed You can adjust this according to how much of each veggie you want
- 4 carrots peeled and sliced You can adjust this according to how much of each veggie you want
- 1-2 lbs london broil, sirloin steak, or whatever your favorite cut of meat is
- 1 pkg Lipton Onion Soup Mix
- 2 tbsp balsamic vinegar
Instructions
- Cut your meat into 1 inch cubes.
- Put your raw cubed meat, potatoes, and carrots in the slow cooker.
- Add 1 can of cream of celery soup, 1 can of cream of mushroom soup, and tomato sauce, and 1 can of water from each can to the slow cooker.
- Add your Lipton Onion Soup Mix, bay leaves and 1 tbsp balsamic vinegar.
- Stir it all together until it is combined well.
- Put your lid on and cook on high for 4-6 hours.
- The longer it cooks the thicker the sauce will become.
- If you want to make it in the oven, you can easily adjust this by adding all the ingredients in to a dutch oven and cook it on 290 in the oven for about 4 hours. Make sure to check it once in a while to make sure it is not burning on the bottom.
- Eat this with some nice crusty french bread, my homemade wheat bread, or these amazing crescent rolls.
