Easy Sourdough Breakfast Sandwich with Micro Greens
We have been working on eating healthier for years. With my own food sensitivities as well as my children’s health in mind, we have taken measures to create a more healthy home and that includes food. I bake homemade sourdough weekly. We rely on farm fresh eggs and veggies from the garden. This easy sourdough breakfast sandwich uses all those things to create a nutritious meal to start your day.
During the winter we have a hard time getting all those vitamins and minerals we need. During the summer we enjoy the bounty from the garden, but in the winter we really struggle to get as much fresh veggies. Of course we can get them at the store, and we do, but I enjoy growing things we can enjoy as well.
Something we have been doing since the start of the new year is growing our own microgreens. This has been such a blessing to us. Microgreens are so easy to grow and offer more nutritional value than most veggies.
We eat our microgreens on salads, wraps, sandwiches and our favorite meal to eat them on is this breakfast sandwich.
With a combination of fresh sourdough toast, over easy eggs, avocado, microgreens and a dash of hot honey this is a wonderful breakfast full of healthy fats, vitamins and minerals and gut healthy breads.
Not only is this sourdough breakfast sandwich a fresh and healthy meal but it is so flavorful. The combination of the creamy eggs and their runny yolk, avocado, crisp bread, fresh tender microgreens and a sweet hot honey balance each other perfectly. I love to sprinkle some fresh sea salt on the top as well.
Other ingredients you can add to this sourdough breakfast sandwich:
You could also add turkey bacon, cheese or cream cheese or other ingredients. I like to keep it simple and enjoy the ingredients together.
Add melted swiss cheese, sauteed spinach, sausage patties, tomato slices, and so much more.
TOOLS YOU’LL NEED
Sourdough Breakfast Sandwich
Ingredients
- 1 slice sourdough bread or favorite bread. One slice if you want open face. You can have two sliced if you want a top to your sandwich.
- 1/4 avocado sliced
- 2 large eggs
- 1/4 cup microgreens
- 1 tbsp hot honey
- sea salt for garnish
Instructions
- Toast your bread while you cook your eggs. I like to cook ours in a cast iron skillet. We prefer to make eggs over easy. You can also make scrambled eggs. You can prepare them whichever way you prefer.
- Once the bread is toasted, brush with some butter. Add the avocado to the toast and gently mash it into the bread. Sprinkle with some sea salt.
- Add your cooked eggs and top with microgreens and drizzle with hot honey.
- If you want to top with a second piece of toast you can. I like to eat it open face, without a top.
- Enjoy this for breakfast, lunch or dinner! Its an amazing meal and one of our favorites!
This is an easy breakfast recipe that yields an amazingly balanced breakfast. My preference is to eat this with just one slice of toast, and eat it open faced. My husband likes to have a top on his. Enjoy it whichever way you like!
The hot honey is a perfect topping for this sourdough breakfast sandwich. I love the way the sweet and hot work with the fresh microgreens.

What kind of microgreens do I grow?
I grow a combination of arugula seeds, broccoli seeds, lettuces, radishes and turnips. This makes for a great combination of spicy salad mix and mild greens. I love this combination.
