Easy Strawberry Cheesecake Ice Cream Recipe
Hey friends! I am excited to share another yummy summer recipe with you. Lets get real though, this could be made any time of year and it just takes minutes to throw together. The hardest part is waiting for it to freeze! I am going to show you how easy it is to make this no churn strawberry cheesecake ice cream using real cream cheese, fresh strawberries and graham crackers.
You will not need an ice cream maker for this yummy strawberry cheesecake ice cream. There is something very satisfying about making homemade ice cream, using natural flavors and ingredients, no high fructose corn syrup or any other icky things. This recipe has only a couple of basic ingredients and it is so so very good.
Today I am sharing this post along with some of my favorite bloggers. We are all sharing great frozen dessert recipes. So you can see ice creams, as well as other yummy frozen treats.
Now, this is quite simple so I feel like I can give you the instructions here as well as a full recipe and you can easily figure this out.
First, you want to use your KitchenAid electric mixer or hand mixer to whip up your heavy whipping cream until stiff peaks form. Set this aside while you prep the rest of the ice cream ingredients.
Mix you cream cheese, vanilla and sweetened condensed milk until nice and creamy and thoroughly mixed. You want it to be nice and smooth.
Next you want to fold in your whipped cream into the cream cheese mixture in a large bowl. Make sure to mix them together completely.
At this point you are going to assemble the ice cream with the additional cream cheese, strawberries, and graham cracker crumbs or granola. I use gluten free granola in mine and it tastes amazing.
I like to roughly mix the cream cheese and graham crackers to make a graham cracker swirl.
Make sure your strawberries are ready too. I like to chop mine up and them slightly smash them to release a bit of juice.
Now, since this is a no churn ice cream , you will not be adding it to an ice cream machine. I like to use a casserole dish for mine. Put down one layer of the ice cream mixture and spread it out. Add dollops of the cream cheese and graham cracker mixture onto the ice cream and them add a couple spoon fulls of the strawberries.
Add another layer of ice cream and then repeat with the cream cheese and strawberries. I like to top it off with the more strawberries and cream cheese mixture and kind of swirl it around to make it mix in a bit.
Throw this in the freezer for 4 hours. You can cover this with plastic wrap as well. When it is hard it is ready to serve. This is a very creamy ice cream . The strawberry swirl and cream cheese chunks are fun and flavorful surprises. The graham crumbs add that graham cracker crust inspired flavor.
You can store this in an air tight container for weeks.
This is delicious strawberry cheesecake ice cream and it is the perfect flavor combination. It is my favorite creamy cheesecake ice cream base and I actually make it plain often, you can see how I make that here.
I am here for the cheesecake flavor and I cannot get enough of this! The best part is I can actually have everything in this ice cream on restricted diet. I still go light and do not over indulge. The are not ice crystals in this ice cream either because it has such a creamy base. The base gives it a creamier texture since it has softened cream cheese in the base along with the whipped cream and sweetened condensed milk.
I love this recipe and I love being able to share them with you all! Not bad for a simple no churn ice cream recipe.
Strawberry Cheesecake Ice Cream Recipe
Easy Strawberry Cheesecake Ice Cream
Ingredients
- 8 oz cream cheese for ice cream
- 14 oz heavy cream
- 1 tbsp vanilla
- 1 can sweetened condensed milk
- 4 oz cream cheese to mix into ice cream prior to freezing
- 1/4 cup granola or crushed graham cracker I used gluten free granola for myself
- 2 cups chopped strawberries
Instructions
- I use my KitchenAid to make this ice cream
- Whip your heavy cream in the mixer until you have formed stiff peaks. Set aside
- Now, mix your cream cheese, vanilla, and sweetened condensed milk until it is completely smooth
- Fold the whipped cream into the cream cheese mixture until completely combined. If not, you will get frozen ribbons of whipped cream. Trust me on this.
- Now for the fun part. Put about 1 -2 cups of ice cream mixture in the bottom of your pan or bowl and smooth out.
- mix 4 oz cream cheese and granola or graham crackers together lightly leaving them in small clumps.
- Prep the strawberries by chopping them up and slightly smashing them.
- add a couple spoonfuls of strawberries across the ice cream and add dollops of the cream cheese and granola mixture.
- Add another layer of the ice cream and repeat until you are out of ice cream. Top with more strawberries and cream cheese chunks.
- Freeze for 4 hours at the least.
