Hearty and Potato, Spicy Sausage and Kale Soup
We have been having some cool mornings and evenings here lately. I have been loving it. It is reminding me that fall is approaching! With this chill in the air, I cant help but want to make soups! I have many go to recipes that I often make, but I have grown tired of them, and so I looked through my fridge and out in my garden for inspiration. What I created became one of my most favorite soups to date! This hearty potato, spicy sausage and kale soup is to die for! It warms you up with the spice from the sausage and with the potatoes and kale, you are guaranteed a rounded out meal!
My son had the sniffles the other day, and my usual go to is chicken noodle soup, but with my diet limitations, I cannot have the noodles and didn’t want to miss out on them, so I figured I could come up with something with oodles of garlic, that was hearty and flavorful. This sausage potato kale soup checks all the boxes.
If you do not want the spiciness of the sausage you can easily substitute it for regular sausage but I think the touch of spice changes the entire soup! The combination of the spice and the garlic cloves is like a one-two punch.
I could literally eat soup every day during the fall and winter, and since I have taken most of the summer of in terms of grand dinners I thought it was time to start making something for my family each night after long days at school and work.
So lets talk about how to make this potato sausage and kale soup recipe:
First, you want to brown the hot Italian sausage in a large soup pot. I use my large dutch oven. You want to brown the sausage, onion, celery and garlic together on medium-high heat. Once the sausage is browned you will now add the chicken broth, fresh rosemary, sage, and thyme, paprika, and pepper.
I like to add fresh sprigs of each. I chop up the sage but throw the other two into the pot intact. This way the soup gets all that wonderful flavor without having to take each little piece of thyme off the branches. The Italian seasoning that the fresh herbs offer is amazing. You can easily use dried herbs as well. I use fresh because I have oodles in my garden right now. As winter approaches, I am sure I will be using my dried herbs.
To the cooked sausage and other ingredients, you will also add the diced potatoes (I like yukon gold potatoes or russet potatoes) and kale. You want the let this all cook on medium-low heat until the potatoes are tender. Once the potatoes are tender it is time to eat!
But first! Make sure to remove the rosemary and thyme sprigs if you used fresh herbs! That thick stem would not be yummy to eat! use a slotted spoon to easily scoop them out. I like to serve this hearty soup with a bit of fresh parmesan cheese and a slice of my crusty sourdough bread. I made this last night and it was once again a huge hit! My 9 year old daughter even told me I needed to make it more often.
I have a couple thoughts in terms of this soup. You can easily add or take away some ingredients to fit your needs or what you might have at your house. You can add white beans or great northern beans as they are called, which will give it a creamy broth addition. You can add carrots or sweet potato so that you can get more veggies into your diet. I simply did not have any on hand, but when I do I will add them for sure next time!
This soup is perfect for those rainy days. This sausage kale soup is also perfect for busy weeknights since it takes about 30 minutes to make! The ingredients are simple and the depth of flavor from the herbs and sausage pieces will satisfy everyone. You can easily use turkey sausage if you prefer that over pork sausage.
I like to add lots of kale to my soup, I rarely like kale but I love it in soup! If you are not a fan of kale you can easily use spinach. I find that I like the little bit of bite the kale has over the softer texture of spinach.
This one-pot meal has has many of my favorite things . The flavor profile of the soup is so satisfying. The combination of the garlic, hot sausage, the rosemary and thyme along with the potatoes create a comforting meal.

Hearty Sausage Potato and Kale Soup
Ingredients
- 1 lb spicy sausage
- 2 tbsp minced garlic
- 1 celery rib diced
- 1 medium onion diced
- 2 cups chopped kale (ribs removed)
- 4-5 medium potatoes peeled and cubed in 1 inch pieces
- 8 cups chicken stock
- 1 sprig fresh rosemary 1 tsp dried
- 3 sprigs fresh thyme 1/2 tsp dried
- 3 fresh sage leaves chopped 1/2 tsp dried
- Generous pinch of pepper
- 1/4 tsp paprika
- carrots and beans optional
Instructions
- In a large stock pot or enamel dutch oven cook the sausage, onion, garlic, celery, and spices on medium high heat until sausage is cooked and the veggies are softened
- When they are done, add the chicken broth, potatoes, kale, and pepper to the pot and let it simmer on medium-low heat until the potatoes are soft.
- Serve with fresh parmesan cheese and crusty sourdough bread.
- Save remaining soup in an airtight container in the fridge.
