Peach Salad with Bacon, Blueberries, Feta and Balsamic Dressing
Its peach season and I have 4 peach trees, which means I have my hands full of peaches. Literally my hands have been covered in peaches for the past week. We had a big rain storm that knocked a ton of peaches onto the ground, and combined with all the ones still on the tree we were in a mad dash to get them gathered up. The thing about peaches is that they don’t stay good for long, so the race was on this week and we ate peaches for every meal! Today I want to share a favorite of ours, this. peach salad with bacon, blueberries, feta cheese and a basil and balsamic dressing.
My college bound son was obsessed with this salad and I knew it would be a fast favorite. I made this peach salad with feta cheese but it would also be amazing with goat cheese!
The flavor of the fresh juicy peaches and blueberries, the saltiness of the bacon and cheese, and the crisp freshness of the assorted lettuces work so well with the tangy and sweet basil balsamic dressing.

Easy Peach Salad Recipe
Peach Salad with Blueberries, Bacon, Feta Cheese and Balsamic Dressing
Ingredients
- 6 cups assorted lettuce I like to use a combination of butter lettuce, red lettuce, and romain for some crisp.
- 2-3 pieces bacon cooked and crumbled
- 3 med peaches Peeled and sliced. You do not have to peel.
- 1/2 cup fresh blueberries
- 1/2 cup feta cheese
- walnuts or pecans optional
- sliced red onions optional

Instructions
- Clean and roughly chop or break the lettuce into smaller pieces.
- Put the lettuce in a medium bowl.
- You can choose to leave the skin on the peaches if you desire. I chose to peel them because my kids do not like them.
- Slice the peaches and add them to the lettuce.
- Add the blueberries, sprinkle the bacon bits and feta cheese on top.
Make Balsamic Dressing
- Mix the salad together and drizzle the dressing over the entire salad or allow people to pour their preferred amount on their individual salads.
- Eat immediately. The peaches will only stay good for a certain amount of time before they start to brown. I would recommend making this right before serving.
- It takes no time to make and the dressing can be made ahead of time and stored in the fridge.
- You can add grilled chicken to this salad for a full nutritional meal.

Easy Balsamic Dressing
The combination of balsamic vinegar, extra-virgin olive oil, kosher salt, black pepper, dijon mustard, fresh basil leaves, and maple syrup is the perfect dressing to top your favorite salads.
The dressing ingredients are the perfect compliment to the peach salad ingredients. You can bump up the protein content by adding grilled chicken to this salad.
I like to add butter lettuce, baby spinach, romaine lettuce, and red leaf lettuce. I like a combination of textures. All you have to do is toss the ingredients together and enjoy this amazing peach salad. The total time to make this salad is just about 10 minutes. Its quick and easy ans oh so flavorful.
This is a great summer salad or early fall salad. When those peaches are in season its the best time to take advantage of those fresh and juicy fruits.
