Scotcharoos Chex Mix (An Easy and Yummy Treat!)
If you are a fan of chex mix recipes, this one is a must try! I love making “Christmas Crack” at Christmas time, but there is one that I love to make in the summer. Its my Scotcharoo Chex Mix! we love scotcharoos at our house. If you dont know what scotcharoos are, they are a sweet treat made with rice krispies, peanut butter, corn syrup, sugar, chocolate chips and butterscotch chips. This chex mix recipe is similar but it has a fun take to it, since its easier to eat for a crowd, and you can store it in a bag. It is also different in flavor because you are using Rice Chex and Corn Chex.
There are so many homemade chex mix recipes out there and this reminds me more of a “muddy buddy” type of treat. Its a combination of crisp chex cereals, soft chewy peanut butter caramel and a chocolate coating of semi sweet chocolate chips(or milk chocolate) and butterscotch chips.
My kids always want me to make this when we are having a party or movie night. Its so easy to whip up, let me show you how I make it!
How to make easy Scotcharoo Chex Mix Treat:
Before making the sauce put 4 cups of rice chex and 4 cups of corn chex in a large mixing bowl. You can also use all of one kind if you prefer that. I actually prefer just the rice cereal but my kids seem to like the combination. Set the cereal mixture aside and lets make the sauce.
First, put 1 cup light corn syrup and sugar in a medium pot on medium heat. Stir until it begins to boil then add 1 cup of creamy peanut butter and mix well. Let it cook together for 1 more minute at a low boil.
Take the peanut butter mixture and pour it over the cereal. Stir it all together until the cereal pieces are all covered with the peanut caramel sauce. Next, pour this mixture onto a large baking sheet pan and spread it out until it is a nice even layer.
Now, take 1 cup of milk chocolate chips and 1 cup of butterscotch chips and heat them in a small pot on low heat. Its time to melt chocolate chips. Once the chocolate has completely melted, take a fork and drizzle the chocolate all over the layer of peanut butter caramel and chex cereal. Use up all the chocolate. It might seem like a lot but trust me, you will want it.
(If you want to use the microwave to melt your chocolate chips and butterscotch chips, heat it in a microwave safe bowl at 30-second intervals. The 30 second increments allows you to melt it without overcooking it. Give the chocolate mixture a good stir each time and assess how much longer it will need to be heated.
Now, let the pan sit somewhere so that the melted chocolate can cool and harden onto the chex cereal. You can set it in the fridge for about 10 minutes or leave it at room temperature for about an hour.
Once it has hardened, you can break it up into smaller pieces and add it to a bowl to serve! You can also store it in a baggies for later or simply cover your bowl with plastic wrap and leave it at room temperature on the counter. You can store it in an airtight container as well. This stuff stores really well.
You could also cut the scotcharoos chex mix into cereal bars if you want it to be more orderly, but we love the idea of getting individual chunks of the peanut buttery, caramel, chocolate and butterscotch goodness.
I love the butterscotch flavor combined with the chocolate and peanut butter. This family favorite is always a hit and its a great recipe to have to lean on when you are looking for a quick and easy treat.

Now, there are things that you can do to make this chex mix scotcharoos recipe even more yummy.
- Add broken up Reese’s Peanut Butter Cups into the cereal mixture.
- Add peanuts to the mixture for extra texture
- Sprinkle the top with sea salt for a salted caramel flavor
- Use natural peanut butter for a more healthier version (but lets be real, this is not a healthy treat, so enjoy it accordingly).
- You can also omit the butterscotch chips if you are not a fan and keep this simply peanut butter and chocolate. It is still amazing this way.
I am a huge peanut butter fan as well as my family and these are something the whole family loves! I am actually off to make a batch today! we are heading out for a couple of days for a last minute trip before school starts and these will be a great treat to share in the car! I will store it in a sealed container and keep it in a cooler bag so that the chocolate does not melt. This tasty treat will be the perfect addition to our trip!
