Sweet and Tasty 2 Ingredient Pina Colada Popsicles for All Ages
If you are here, you may or may not know that this week is popsicle week! Well, its popsicle week for me at least. We have been making and testing(eating all the popsicles) all week long. It’s not a bad gig I tell you. If you missed yesterday, you can check out my mango mojito popsicle recipe here! Today we are making one of my favorites! Pina Colada Popsicles? Yes!
We were sitting poolside in Puerto Villarta about a week and a half ago. With Pina Coladas in our hand, we were ready to take on the world. I should clarify that they were non-alcoholic pina coladas…we don’t drink around here. But man were those drinks so tasty and perfect in the hot and humid weather. The pool did help a bit with that too:)
That doesn’t stop us from thoroughly enjoying a sweet tropical drink!
Now, we all know that what makes a pina colada so good is the combination of coconut and pineapple. The tart pineapple mixed with the sweet creamy pineapple is dreamy….and its even more dreamy in a popsicle!
What makes this pina colada popsicle recipe even better is that it only has 2 ingredients! Its really not even worth making a recipe card for it!
So I am not going to….
If you want to make these fabulous pina colada popsicles..here is what you need:
- 1 can of cream of coconut ( I use the brand Coco Lopez)
- 2-3 cups fresh pineapple (you can use frozen if you cant get your hands of fresh
Blend these two ingredients in the blender ( I use my Blendtec Blender )and then pour in to a popsicle mold. This is the popsicle mold that I have and its wonderful.
It is a silicone popsicle mold, and it comes with a package of individual bags that you can put your popsicles in. It also came with a huge bag of popsicle sticks. There is a lid that holds the sticks stable as well. I really like it!
These popsicles are soooo good! I have resorted to hiding them from my kids because the will eat them all!
If you want to you could add some rum or rum flavoring, but we decided to keep it simple with items we can get ahold of easily…plus I am not a big fan of rum flavors.
These are the perfect treat on a warm summer evening. They will also be the talk of the party when you pull out your individually wrapped homemade popsicles for your friends!
Making homemade treats such as these pina colada popsicles doesnt have to be complicated. Summer should be enjoyed. You shouldn’t be spending all your time in the kitchen…and with these super easy pina colada popsicles, you can have the best of both worlds!
