Amazing Creamy Garbanzo  Bean Salad

the other day I came up with a meat free alternative for chicken salad that can be eaten alone, on bread or eaten with chips. This garbanzo bean salad is so flavorful and amazingly easy to make!

What you need

– Garbanzo Beans – Cabbage – Red Bell Pepper – Green Onions – Avocado Mayo – Greek Yogurt – Red Wine Vinegar – Dill – Dijon Mustard – Sugar – Salt and Pepper

First put your garbanzo beans in a large bowl. With a fork or potato masher, mash up about half of the beans. Leave some whole and give it a rough mash.

Add all the veggies into the bowl. Cabbage, red bell pepper, and green onions.

Mix up the dressing and pour over the top of the salad. Stir it all together and eat immediately or save it for later in the fridge!
