Balsamic Chicken Salad with Roasted Sweet Potatoes, Avocado and Feta
The balsamic chicken salad with sweet potatoes, avocado and feta is an easy weeknight dinner perfect for meal prepping and the flavor is out of this world! The balsamic dressing is the perfect topping to this salad.
12ozraw chicken breastscut into small pieces, I like them to be about 1 inch pieces.
10-12cupsspring salad mix, butter lettuce or romainewe have used just about every type of lettuce!
2-3mediumsweet potatoespeeled and diced into small pieces
1-2sliced shallots Can also use red onion. Will only need about 1/2 onion
2avocados
1-2cupsfeta cheese crumbled
Balsamic Dressing
3/4cupbalsamic vinegar
6tbspolive oil
4tbspwater
6tbsphoney
1tbspitalian seasoning
4tspminced fresh garlic
1/2tspsalt
1tbspdijon mustard
Instructions
To make this salad you can prepare ingredients ahead of time.
Mix up your dressing first. Make sure to whisk the dressing as you add the olive oil so that it blends together. If it separates, just quickly whisk it up to remix. Once it is combined, add about 1/4 cup to the diced raw chicken and let it marinade while you prepare the rest of the ingredients.
Roast your sweet potatoes in an over heated at 400 degrees for about 25-30 minutes. This will depend on how large you make the pieces. I make mine small, about 1/2 inch in size.
While the sweet potatoes are cooking, you can prepare the other ingredients, you can put everything in one bowl or keep it all separate and allow people to add what they prefer.
In a large skillet with 1 tbsp olive oil, heat it on medium high heat. Add your chicken to the skillet and saute it until it is cooked through. Check the sweet potatoes occasionally and remove them when they are soft in the middle.
Once the chicken and sweet potatoes are done, its time to assemble!
In a bowl add some greens, top with some chicken, sweet potatoes, avocado, shallots and feta cheese. Drizzle the balsamic dressing over your salad and enjoy!
